Halloumi Burgers

These veggie halloumi burgers in soft rolls are sure to be a hit with your guests this summer. They’re quick, easy and veggie — so you can be sure everyone has something delicious to eat.

Ingredients (serves 4):

  • 250g block halloumi cheese (chop into 8 slices)
  • 1 tbsp olive oil
  • 4 seeded burger buns
  • Pot of hummus
  • 1 bag of rocket
  • 1 cucumber (sliced)
  • 1 white onion (thinly sliced)
  • 1 avocado (thinly sliced)

STEP 1
Lightly brush your halloumi slices with oil on both sides, then cook on your BBQ for 6 mins, flipping halfway through the cooking time (or until golden brown).

STEP 2
Slice your burger buns and lightly toast on the BBQ. Put a dollop of hummus on the bottom of each bun, then add your rocket, cucumber, onion and avocado slices.

STEP 3

Pop your halloumi slices into your bun and serve with a spoonful of salsa.

Chicken Tikka Kebab Skewers

This Indian style dish is perfect for grilling and is sure to have your guests coming back for more.

Ingredients (serves 4):

  • 150g natural yoghurt
  • 2 tbsp curry paste
  • 4 chicken breasts (cubed)
  • 4 chapatis (warmed)
  • 8 wooden skewers

STEP 1
Mix the yoghurt with the curry paste, then add your chicken. We’d recommend letting it marinate in the fridge for over an hour for the best flavour.

STEP 2
Remove your chicken from the marinade, shaking off any excess. Put your chicken cubes onto the skewers and cook on medium heat for 15-20 mins, turning every 5 minutes.

STEP 3
Serve your chicken tikka skewers with warm chapatis and salad.
